Blueberry overnight oats

Description

Overnight oats are a super quick breakfast that can be prepared ahead of time. They are a great source of protein and fibre to keep you satisfied longer and flavonoids for heart and brain health. And as the name suggests – it needs to prepped the night before!


Ingredients

Scale

1 cup fresh or frozen blueberries

1/3 cup almonds

2 cups milk or plant milk

2 tablespoons plain or vanilla yoghurt

1 teaspoon vanilla

1 cup traditional oats

2 tablespoons chia seeds

Extra yoghurt and blueberries for on top


Instructions

  1. Blitz together the blueberries, almonds, milk, yoghurt and vanilla in a food processor or smoothie blender.
  2. Stir in the oats and chia seeds.
  3. Divide the mixture up into individual jars or containers so they are ready to go leaving about an inch at the top to add extra yoghurt and berries or alternatively (if you are eating them at home) you can pour the mixture into one large bowl or container.
  4. Cover and refrigerate overnight.
  5. In the morning, top the oats with extra yoghurt and blueberries. If you have made multiple jars, once the oats are now set you can top them all with yoghurt and fresh or frozen berries so they are ready to grab and go in the mornings.
